Zucchini Bars

Ingredients

  • Topping:
  • 3/4 cup butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 3/4 cup flour
  • 3/4 cup coconut
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 2 cups shredded zucchini (drained in colander)
  • 3/4 cup raisins
  • 3/4 cup dates or chocolate chips
  • 1 cup powdered sugar
  • 2 tsp milk
  • 1 Tbl butter, melted
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon

Preparation

Step 1

Mix all ingredients for bars and bake in greased 10x15 pan. Bake at 350 for 40 minutes. Let cool then drizzle topping mixture over bars. Or, to reduce the sugar intake, omit topping. Cut into bars, and drizzle small amount individually.
