Mama's Minestrone Stew

  • 1 cup chopped onion
  • 3 large cloves garlic, minced
  • 1 TB Wesson oil
  • 2 (14 1/2 oz.) cans chicken broth
  • 1/2 c. dried rotini pasta
  • 1 t. dried Italian seasoning, crushed
  • 1 c. small broccoli florets
  • 1 6-oz can Hunt's Tomato Paste
  • 2 cups cubed cooked chicken
  • 1 15-oz can dark red kidney beans, rinsed and drained
  • Shredded Parmesan cheese (optional)



Step 1

In a large saucepan, cook onion and garlic with hot Wesson Oil over medium heat for 2 minutes. Add broth, pasta, and Italian seasoning. Bring to a boil; reduce heat. Simmer, covered, 5 minutes. Stir in broccoli and Hunt's Tomato Paste. Simmer, covered, 5 minutes or until pasta is tender. Add chicken and beans; heat through. Top with Parmesan cheese, if desired.
