Mississippi Mud Medallions

Ingredients

  • 3 whole graham crackers
  • 2 cups semisweet chcolate morsels
  • 2/3 cup pecan pieces, toasted
  • mini-marshmallows

Preparation

Step 1

Place graham crackers in a plastic bag and crush. Spoon by level 1/2 tsp 1 inch apart onto a parchment-paper lined baking sheet; flatten to 1-inch rounds.
Microwave chocolate at high for 30 seconds; stir. Microwave 10 to 20 more seconds or til melted and smooth, stirring at 10-second intervals.
Spoon melted chocolate into a plastic bag. Snip one corner to make a small hole. Pipe chocolate over each graham cracker round.
Working quickly, sprinkle each round with pecans and place a mini marchmallow on top.
Chill 15 minutes. Store in an airtight container at room temp up to 1 week.
