Ingredients
- 3 cloves garlic, peeled and halved
- 4 - 1/2 -inch-thick slices Italian or French bread
- 5 tablespoons olive oil
- 3 tablespoons mayonnaise
- 3 tablespoons lemon juice (juice of 1/2 lemon)
- 6 anchovies, mashed or 2 teaspoons anchovy paste
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium-size head romain lettuce-torn into bite-size pieces
- 1/4 cup grated Parmesan cheese

Step 1
Preheat oven to 400F. Using 2 cloves of garlic, rub the slices of bread on both sides. Brush with 2 tablespoons of the oil and cut into 1/2-inch dice. Spread on an ungreaed baking sheet and bake, uncovered, tossing occasionally, until golden brown and crisp - about 10 minutes. It can also be done in a frying pan on the stove top.
Meanwhile, rub a large chilled bowl with remaining garlic. Add mayonnaise, lemon juice, anchovies, salt, pepper and remaining 3 tablespoons oil and whisk until creamy (You can do this part in a blender). Add romaine, Parmesan, and croutons and toss until well coated. Divide evenly among 4 chilled plates.
