Coffee Can Ice Cream

Ingredients

  • Ice cream:
  • 1 3-lb coffee can with lid
  • 1 1-lb coffee can with lid
  • rock salt
  • crushed ice
  • 2 cups whipping cream
  • 1/2 cup sugar
  • 1/2 t vanilla
  • 1/2 t peppermint extract
  • red food coloring
  • 3 T crushed peppermint stick

Preparation

Step 1

Place 1-lb coffee can in center of 3-lb coffee can. Fill 1-lb can with ice cream ingredients. Layer rock salt and crushed ice around 1-lb can, inside 3-lb can. Cover both with lids. Roll cans for about 15 minutes, or until ice cream is at correct consistency.
