Ingredients

  • 1 pork butt or pork shoulder, cut into large chunks, excess fat removed along with connective tissue
  • salt, pepper, southwest spice
  • 1 onion, peeled and cut in half
  • 1 head of fresh garlic cut in half
  • 1 lime cut in half
  • 4-5 qts. of cold water

Step 1

. prepare meat, season and brown in a skillet

. place meat in a pot with the rest of ingredients, cover with cold water and simmer until meat is fork tender

. remove meat from the pot and shred, taste and adjust seasoning
