Creamy Corn and Spinach

  • 2 tbs olive oil
  • 2 cloves garlic
  • 16 oz pkg frozen corn, thawed
  • 2 scallions, thinly sliced
  • 1/2 cup sour cream
  • 3 cups spinach, roughly chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper



Step 1

Heat 2 tbs olive oil, 2 cloves garlic in a large skillet over medium heat for 2 minutes. Add 16oz pkg frozen corn (thawed) and 2 scallions (thinly sliced) and cook until heated through, about 3 minutes. Stir in 1/2 cup sour cream and cook for 1 minute. Add 3 cups spinach (roughly chopped), season with 1/2 tsp salt and 1/4 tsp pepper and cook, stirring occasionally, until just wilted, about 2 minutes.
