Ingredients
- 1 1/2 Tbsp olive oil
- 1 1/2 Tbsp water
- 4 tsp honey mustard
- 1 Tbsp apple cider vinegar
- 1/4 tsp table salt
- 1/8 tsp black pepper, freshly ground
- 8 cups fresh spinach, baby variety
- 1 cup grapes, red, seedless, halved
- 1/3 cup (chopped) uncooked red onion(s), or thinly sliced
- 1/4 cup slivered almonds, toasted
- 1/4 cup semi-soft goat cheese

Preparation
Step 1
To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt and pepper.
Add spinach, grapes and onion to bowl; toss to mix and coat.
Place about 2 1/4 cups salad on each of 4 salad plates; sprinkle each with 1 tablespoon almonds and 1 tablespoon cheese. Yields 1 salad per serving.
