Spinach Salad with Goat Cheese, Grapes & Honey Mustard Dressing

Ingredients

  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp water
  • 4 tsp honey mustard
  • 1 Tbsp apple cider vinegar
  • 1/4 tsp table salt
  • 1/8 tsp black pepper, freshly ground
  • 8 cups fresh spinach, baby variety
  • 1 cup grapes, red, seedless, halved
  • 1/3 cup (chopped) uncooked red onion(s), or thinly sliced
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup semi-soft goat cheese

Preparation

Step 1

To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt and pepper.

Add spinach, grapes and onion to bowl; toss to mix and coat.

Place about 2 1/4 cups salad on each of 4 salad plates; sprinkle each with 1 tablespoon almonds and 1 tablespoon cheese. Yields 1 salad per serving.
