Quinoa Egg Muffins

Ingredients

  • 1 cup cooked quinoa
  • 2 whole eggs
  • 1 cup diced veggies of your choice
  • 4 egg whites
  • Spices of your choice

Preparation

Step 1

Preheat oven to 350°F. Coat muffin tins with cooking spray. Combine ingredients and pour mixture into tins.

Bake for 30 minutes. Let cool before serving.

Store leftover muffins covered in refrigerator.

Heat two muffins in microwave for 30 seconds for breakfast during the week and enjoy!
