Ingredients
- 2 10-oz cans Rotel
- 1 28-oz can whole tomatoes with juice
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 whole jalapeno, quartered and sliced thin, with or without seeds and membrane
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp sugar
- 1/2 whole lime, juiced

Preparation
Step 1
Combine all ingredients in a blender or food processor. (This is a very large batch. Use a 12-cup food processor or you can process in batches and then mix everything together ina large mixing bowl.)
Pulse til you get the consistency you like. I do about 10 to 15 pulses. Taste and adjust seasoning as needed.
Refrigerate at least 1 hour before serving.
