Potato Latkes

Ingredients

  • 2 eggs
  • 3 cups potatoes, grated and drained
  • 4 T onion, grated
  • 1 t salt
  • 1/4 t pepper
  • 2 T cracker or matzo meal
  • 1/2 cup fat, butter or oil

Preparation

Step 1

Beat eggs and add the next 5 ingredients. Heat 1/2 the oil in frying pan and drop mixture into it b the tablespoon. Fry until brown on both sides. Serve with sour cream &/or applesauce.
