Crusty Roast Leg of Lamb

  • 1 boneless leg of lamb 4-5 lbs
  • 1 c soft bread crumbs, 2 slices
  • 2 tbs butter, melted
  • 1/2 tsp herbes de provence
  • Dash salt and pepper
  • 1 lrg onion, finely chopped
  • 1-14 oz chicken broth
  • 2-1/2 lbs med potatoes, peeled and cut into wedges
  • 1 lrg tart apple, sliced



Step 1

Place leg of lamb on a rack in a roasting pan. In small bowl, combine bread crumbs, butter and seasoning; spread over meat. Place onion in pan; pour broth over onion. Bake uncovered for 1 hour. Add potatoes; bake 30 mins longer. Add apple, bake 30 mins longer or until potatoes are tender and meat reaches doneness. Remove vegetables and apple and keep warm. Let roast stand for 10-15 mins before slicing.
