Potato Latkes

Ingredients

  • 6 large potatoes, grated
  • 1 large onion, grated
  • 2 eggs, beaten
  • 2 T flour
  • 1 t salt
  • pinch pepper
  • 4 T olive oil, or other veggie oil

Preparation

Step 1

Drain any liquid from potatoes. Mix all ingredients except for oil in a large bowl. Heat oil in large skillet. Drop potato batter into pan by large spoonfuls and fry to deep brown. Drain on paper towels. Serve with sour cream &/or applesauce.
