Ingredients
- 1-2 tablespoons olive oil, for sauteing
- 1 1/4 pounds shrimp, peeled and deveined
- 1 1/4 pounds scallops
- 1 pound mushroom caps
- 1/2 cup white wine
- 1 cup water
- 2 tablespoons cornstarch
- 1 bunch scallions, diced
- 1 tablespoon Cajun spice mix
- Pinch dry basil
- 1 garlic clove, minced
- 2 pounds cooked fettuccini
Preparation
Step 1
In a large skillet, heat the oil. Brown the scallops and shrimp on both sides. Remove the seafood and set aside. Drain the oil.
To the same skillet, add the mushrooms.
In a separate container, mix together the wine and water. Dissolve the cornstarch in this mixture and add to the skillet. Bring to a simmer. Add the scallions, Cajun spices, basil and garlic. Return to a simmer and add the reserved seafood. Return to a simmer and cook for 2-3 minutes, until the scallions are soft.
Toss with the pasta and serve immediately.
