Ingredients

  • Sharp cheddar cheese, grated 8 oz
  • Unsalted butter, room temperature 4 tablespoons
  • Salt 1⁄2 tsp
  • All purpose flour 1 cup
  • Ice water 2 tablespoons
  • Salt

Preparation

Step 1

Combine cheese, butter, and salt in stand mixer fitted with paddle attachment; mix

Slowly add flour and then ice water

Divide dough into two disks; wrap with plastic and refrigerate at least 30 minutes

Preheat oven to 375F/190C

Roll each disk to 1/8th inch

Cut into 1-inch squares with roller

Separate squares and poke a hole in the center with a toothpick

Bake 10-15 minutes

Remove to cooling rack and allow to cool
