- 2 sprays cooking spray
- 2 tbsp Dijon mustard
- 1 tsp olive oil
- 1 tbsp rosemary
- 1 tbsp oregano
- 1 tbsp parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 lb potatoes

Preparation
Step 1
Preheat oven to 425°F. Coat a nonstick baking sheet with cooking spray.
Combine all ingredients, except potatoes, in a mixing bowl; add potatoes and toss to coat. Place potatoes on prepared baking sheet and bake, turning occasionally, until potatoes are tender but crisp, about 25 to 30 minutes.
