Asparagus, Avocado and Artichoke Pasta

  • 1 Bunch Asparagus
  • 1 Small Container of Artichoke Hearts
  • 1 Avocado
  • 1/2 Lb Bow-tie Pasta
  • 3 Tbsp Pesto
  • 1 Tbsp Butter
  • Romano Cheese
  • Salt and Pepper

Preparation

Step 1

In a large salted pot, boil the asparagus for 2 minutes. Remove from water and set aside.

Return water to a boil and add the pasta. Cook according to directions. Drain and reserve 1 cup pasta water.

Halve, pit and cube the avocado. Squeeze lemon or lime juice over avocado to avoid browning.

In a skillet, melt the butter and add the asparagus and drained artichokes. Cook for 2 minutes. Add the cooked pasta, avocado, pesto, romano cheese, salt and pepper. Cook until combined.
