Rock Cookies

We always had these at Christmas time. Evidently some of us (me!) love these cookies and for others the name says it all.

Ingredients

• 1 cup butter
• 1 1/2 cup brown sugar
• 3 eggs
• 3 tablespoon strong coffee
• 1 tablespoon cinnamon
• 1 tablespoon allspice
• 1 teaspoon baking soda
• 1 cup raisins (optional)
• 1 cup nuts (pecans or walnuts)

Preparation

Step 1

Cream together butter, brown sugar, eggs, and coffee. Sift together dry ingredients and then add enough all-purpose flour to make as stiff as possible.
