Ingredients
- 2 1/2 cups old-fashioned oats
- 1 cup chopped pecans
- 3/4 cup coconut flakes
- 1/3 cup wheat germ
- 2 tbsp sesame seeds, optional
- 1/2 cup honey
- 1/4 cup frozen apple-juice concentrate, thawed
- 2 tbsp brown sugar
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1 bag (6 oz.) dried cranberries
Preparation
Step 1
1. In a 5-quart slow cooker, stir together oats, pecans, coconut flakes, wheat germ, and sesame seeds, if using.
2. In a bowl, mix together honey, apple-juice concentrate, sugar, vanilla, and cinnamon. Microwave for 1 minute. Pour into slow cooker and stir to combine. Cook 1 hour on high, without lid. Reduce to low, cover, and cook 4 to 5 more hours, stirring occasionally, or until granola is dry and medium brown. Stir in cranberries.
