Herbed Parmesan Spread

Ingredients

  • 3 cloves garlic
  • 1/4 C. lemon juice
  • 1/2 C. Parmesan cheese
  • 1/2 C. fresh parsley
  • 1 t dried basil
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 C. mayonnaise
  • 1/2 C. sour cream

Preparation

Step 1

Combine all the ingredients in a food processor or mixer. Process until smooth, chill before
serving.

Use this spread as a butter substitute with really good bread or rolls. It is simple to make if you have a food processor or mixer and can be surprisingly healthy if you use fat free mayonnaise and sour cream. Make this up to three days in advance, the flavors will improve with a day or two in the fridge.
