Ingredients
- 3 lbs. thin to med. asparagus, trimmed
- 1 c. mayo
- 4 tsp. soy sauce
- 1 1/2 tsp. sugar
- 2 tsp. fresh lemon juice
- 2 tsp. wasabi paste
- Note: You can substitute wasabi powder for the past, but they found that paste imparts a fresher flavor.
Preparation
Step 1
Blanch asparagus in 2 batches in a 6-7 qt. wide pot of boiling salted water, 1 Tbsp. salt for every 4 qts. water for 1 minute per batch. (I steam them over salted water instead). Transfer to a colander and rinse under cold water. Drain well and pat dry.
Whisk together remaining ingredients in a small bowl until sugar is dissolved.
Serve.
