Ingredients

  • Crust:
  • 1 c. butter, softened
  • 1/2 c. powdered sugar
  • 2 tsp lemon zest
  • 2 c. flour
  • Filling:
  • 4 eggs
  • 2 c. sugar
  • 1/4 c. flour
  • 1 tsp baking powder
  • 5 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • Glaze:
  • 1 c. powdered sugar
  • 2 tbsp lemon juice, plus more as needed

Preparation

Step 1

Heat oven to 350. Combine butter, sugar and lemon zest in mixing bowl and beat for a minute or so until combined. Add flour and beat until the mixture is crumbly. Press crust into the bottom of parchment lined or ungreased 9x13 pan. Bake for 25 mins until light golden brown.
While crust is baking lightly beat eggs with a whisk. Add remaining ingredients and beat with whisk until combined. Remove baked crust from oven and pour filling over it. Return to oven bake additional 25-30 mins until top is light golden brown and starts to crack around edges. Let cool completely atleast 1 hr.

Stir or whisk powdered sugar and lemon juice. Add more lemon juice by just a few drops at a time. until glaze is pourable consistancy. Spread glaze over cooled bars. Let set atleast 1/2 hr before slicing. Store bars in frig or return to room temp.
