- Recipe:
- 10 pasteurized egg yolks
- 1 liter of whole milk
- 5 tbsp of golden syrup
- 1 1/2 of cup of sugar
- 1 tsp of vanilla extract
- 1 1/2 cup of pineapple juice
- 30 drops of pineapple aroma (but give it a taste for every 5 drops, maybe your aroma is stronger(maybe only 20 drops) or less strong (maybe 40 drops))

A few days ago I bought a lot of different flavors, including pineapple aroma. So I thought I’d go make some pineapple gelato! I don’t think pineapple juice tastes through so strongly, so when the aroma came in the mixture, it was something completely different! It is fresh, delicious and a wonderful pineapple flavor!
if you want a stronger yellow color then add in some yellow food coloring
Beat the egg yolks with the sugar until it has a creamy texture and the yellow color is almost white. Then add the syrup and stir. In with the milk, the juice and the vanilla extract. Now it’s time for the pineapple aroma drops, give it a taste for every 5 drops! If you want a more yellow color just add in some drops of food coloring. When everything is mixed well it is ready. In the icemaker with the first half or third (depends on the size of your machine) and stir until it is delicious creamy. It should have an hour in my machine. Come if necessary the gelato in a pot and put in the freezer for an hour. Then in with the next portion!
