Salmon Cakes with Lime Sauce
These are so wonderful! My kids like them without the sauce, I love them with the sauce!

Ingredients
- Lime Sauce:
- 2 cans Salmon or Jack Mackerel
- 1 lime
- 1 Tbsp dried Parsley
- 3/4 c bread crumbs
- 1/2 c mayonnaise
- 1 egg
- 1/2 tsp onion powder
- 1/4 c sour cream
- 1/2 c mayo
- 2 tsp sugar
- zest and juice of lime
- vegetable oil for frying

Preparation
Step 1
Mix Lime Sauce ingredients well and let sit as cakes are cooking.
Drain salmon. Grate zest of line, and then juice lime. Use 1 pinch of zest in cakes, and 1 tsp of juice in cakes.
Mix salmon, juice, zest, parsley, crumbs, mayo, egg and
onion powder together. Form cakes and fry in small amount of vegetable oil until golden brown.
Serve with a dollop of sauce over cakes.
