Lentil Soup Recipe

  • 1 cup brown lentils
  • 1 medium onion
  • 1 carrot
  • 3 stalks celery
  • 1/4 cup tomato sauce
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 3 T lemon juice
  • 1 tsp. sherry vinegar
  • 2 cups low sodium chicken broth
  • 3 cups of water
  • 2 bay leaves
  • 1 T olive oil



Step 1

Heat a stock pot to medium heat and coat with olive oil. Dice onions, carrots, and celery and cook for 5-7 minutes. Remove vegetables and add water to pan. Bring to a boil. Add lentils, reduce heat, and simmer for 30 minutes. Drain lentils. Add lentils, vegetables, lemon juice, tomato sauce, salt, pepper, coriander, cumin, and sherry vinegar into a high-powered blender (I used my Vitamix). Blend for 20-30 seconds. Transfer back to pot and simmer for another 15 minutes with bay leaves. Remove bay leaves. Transfer to four separate bowls and top with black pepper to taste.
