Ingredients
- 6 dried chipotle chiles
- 1 cup boiling water
- 1 onion chopped
- 1/2 cup brown sugar
- 1/2 cup cider vinegar
- 1/2 cup water
- 1 can tomato paste - (12 oz)
- 4 garlic cloves minced
- 2 tablespoons butter
- 1 tablespoon soy sauce
- 1 1/2 teaspoons cumin
- 1 1/2 teaspoons thyme
- 1 1/2 teaspoons dry mustard
- 1 teaspoon Tobasco sauce
Preparation
Step 1
Place the chiles in the 1 cup of boiling water. Let soak for 1 hour. Remove stems and seeds and chop finely.
Melt butter in a saucepan and add onion, garlic, cumin and thyme. Saute until the onion is soft and translucent.
Add chiles (with the water), and remaining ingredients. Bring to a boil. Reduce heat, cover and simmer for 30 minutes.
