Potato and Horseradish Salmon

Ingredients

  • 1/4 cup Dijon mustard
  • 3 T prepared horseradish
  • 1 1/2 tsp. chopped fresh thyme
  • 1 tsp wasabi powder (optional)
  • 8 (6 oz.) skinless salmon filets
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 cup instant potato flakes

Step 1

Preheat oven 400
Combine first 4 ingreds in small bowl. Sprinkle salmon evenly with salt and pepper and brush both sides with mustard mixture. Dredge salmon in potato flakes. Lightly spray salmon with cooking spray. Heat large non-stick oven safe pan medium high; cook salmon 2 mins both side or until golden. Place pan in oven and bake for 6 mins or until fish flakes. Serve immediately.
