Ingredients

  • Meringue:
  • Can be made days ahead
  • 6 egg whites
  • 1/2 t. cream of tartar
  • 1/4 t. salt
  • 1 3/4 c. sugar
  • Filling:
  • 6 oz. Softened cream cheese
  • 1 c. sugar
  • 1 t. vanilla
  • 2 c. whipping cream, whipped
  • 2 c. minature marshmallows
  • Topping:
  • 6 oz. of strawberries (I used frozen) and cherry pie mix.

Preparation

Step 1

Beat egg whites until frothy. Add cream of tartar. Beat until soft peaks. Gradually add sugar beating constantly until sugar is dissolved and meringue is stiff and glossy.

Pile on a piece of brown paper, spreading to fill paper that is on a cookie sheet. Place in 275 degree oven for 1 hr. Turn of head and allow meringue to cool in unopened oven for 8 hrs. or overnight.Meringue:

Filling:
Mix cream cheese, vanilla & sugar – fold in marshmallows then whipped cream. Pile on the cool meringue
Refrigerate 12 hrs.
