Ingredients
- 4 skinless, boneless chicken breasts, pounded to 1/4 inch thick
- 1/4 cup flour
- 1 tsp salt
- 1 tbs olive oil
- 1 tbs butter
- 8 oz mushrooms, quartered
- 1/2 tsp salt
- 1/8 tsp pepper
- 3/4 chicken broth
- 1/2 cup Marsala wine
- 1 tbs fresh parsley. chopped

Step 1
In a medium bowl, mix flour and 1 tsp salt. Coat chicken in flour mixture, pat excess flour off. In a large skillet, heat oil and butter over medium heat; cook chicken 3 minutes; turn, cook 2 minutes. Remove and keep warm. Add mushrooms, cook 3 minutes. Add salt, pepper, broth and wine; bring to a boil; boil 2 minutes. Return chicken to skillet; cover and simmer 3 minutes. Sprinkle parsley over chicken.
