- STEAM MUSSELS AND COOL

Finely diced red onion, scallions, chives, chopped yolks and whites, roasted peppers, cornichons, dried mustard
S & P
Olive oil
Wine vinegar
Add parsley at end
Put mussels on half shell and top with sauce
