Ingredients

  • 2 (12 0z) packages of smoked sausage
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 garlic clove, minced
  • 2 c of beef broth
  • 1/2 t of sea salt
  • 1/2 t of pepper
  • 2 Minute® Ready to Serve Rice packages (4 individual servings)
  • Cilantro: garnish optional

Preparation

Step 1

Cut sausage into 1/2 in slices and saute with bell pepper, garlic and onion in a nonstick pan for about 10 minutes on medium heat until lightly browned. Add beef broth and bring to a boil. Add both packages of Minute® Ready to Serve Rice, salt, and pepper to pan. Reduce heat to medium-low heat and cook for 5 minutes or until the rice is tender. Garnish with cilantro or parsley.

Makes 6-8 servings

*Please note: if you prefer more rice, just add more water and rice to meet your family’s needs.

Also, I have made this meal without the rice and froze individual servings in baggies. I just heat up a Minute® Ready to Serve Rice and mix it with the sausage. It makes great last minute dinners.
