Ingredients

  • ½

    c finely chopped onion

  • ¼

    c butter, cubed

  • 1-14 oz can chicken broth

  • 1

    c cubed peeled potato

  • 2

    celery ribs, chopped

  • 2

    med carrots, chopped

  • ¼

    c Clamato juice

  • ¼

    tsp lemon pepper seasoning

  • ¼

    flour

  • 2

    c milk

  • 2

    c shredded sharp cheddar

  • 1

    can crabmeat, drained, flaked and cartilage removed

  • 1

    c cooked med shrimp, peeled, deveined

Directions

In lrg saucepan, saute onion in butter until tender. Stir in broth, potato, celery, carrots, Clamato, and lemon pepper. Bring to boil. Reduce heat, cover and simmer for 15-20 mins, or until vegetables are tender. In small bowl, whisk flour and milk until smooth; add to soup. Bring to a boil, cook and stir for 2 mins or until thickened. Reduce heat, add cheese, crabmeat, and shrimp. cook and stir until cheese is melted.
