Ingredients

  • 1/2 c finely chopped onion
  • 1/4 c butter, cubed
  • 1-14 oz can chicken broth
  • 1 c cubed peeled potato
  • 2 celery ribs, chopped
  • 2 med carrots, chopped
  • 1/4 c Clamato juice
  • 1/4 tsp lemon pepper seasoning
  • 1/4 flour
  • 2 c milk
  • 2 c shredded sharp cheddar
  • 1 can crabmeat, drained, flaked and cartilage removed
  • 1 c cooked med shrimp, peeled, deveined

Preparation

Step 1

In lrg saucepan, saute onion in butter until tender. Stir in broth, potato, celery, carrots, Clamato, and lemon pepper. Bring to boil. Reduce heat, cover and simmer for 15-20 mins, or until vegetables are tender. In small bowl, whisk flour and milk until smooth; add to soup. Bring to a boil, cook and stir for 2 mins or until thickened. Reduce heat, add cheese, crabmeat, and shrimp. cook and stir until cheese is melted.
