Mashed Cauliflower with Parmesan

Ingredients

  • 1 large head of cauliflower (about 2 1/2 lbs), broken into florets
  • 1 cup shredded parmesan cheese, divided
  • 1/3 cup heavy whipping cream
  • 1 T butter
  • 1/2 tsp pepper
  • minced fresh parsley, optional

Preparation

Step 1

Place 1 inch of water and cauliflower in a large saucepan. Bring to boil. Cook, covered 10-12 minutes or until soft. Drain and mash.

Stir in 1/2 cup of cheese, cream, butter & pepper. Sprinkle with remaining cheese and parsley.
