Ingredients

  • 5 tbs olive oil
  • 2 pounds boiling potatoes, peeled and sliced
  • 1/2 cup chopped onions
  • 1 tsp chopped garlic
  • 2 tbs chopped fresh parsley
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups boiling water

Preparation

Step 1

Heat oil in a large skillet over medium heat. Add potatoes to skillet; cook 10 minutes or until slightly brown. Add rest of ingredients and mix. Do not stir. Shake pan for 1-2 minutes. Cover and simmer over low heat about 20 minutes. Shake skillet occasionally to keep potatoes from sticking.
