Ingredients

  • 1/4 pound dried rice noodles (banh pho)
  • 4 tablespoons vegetable oil
  • 2 cloves garlic, chopped
  • 1/4 cup water
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 10 to 15 shrimp, cooked, peeled and deveined
  • 4 to 6 scallions cut in inch-long pieces
  • 4 tablespoons roasted peanuts, coarsely chopped
  • 2 cups bean sprouts
  • 1 lime cut into wedges

Preparation

Step 1

1. Soak the noodles for two hours in cold water or ½ hour in hot water. Drain.
2. Measure and chop all the ingredients and set them near the stove.
3. Heat the oil in a wok or large nonstick skillet over medium heat.
4. Add the garlic and stir for a minute.
5. Add the noodles. Cook them for about three minutes, stirring constantly and pulling them apart.
6. Add the water, fish sauce, sugar, paprika, and cayenne pepper, stirring to coat all the noodles.
7. Add the shrimp, scallions, peanuts, bean sprouts.
8. Keep stirring and cook for about three more minutes.
9. Serve with lime wedges on the side for squeezing over the top.
