Hot and Sour Stir-Fry Pork and Cabbage

This is Soooooo good!! It is very spicy though. We like spicy food around here & it is almost too spicy for me.

Again, this is a zone recipe. I have changed the quantities just a little to make this into 4 - 3 block meals. Each meal has a break down of 3 blocks of protein, 2 blocks of carbs, and 3 blocks of fat.

Ingredients

  • Spices:
  • 12 oz. lean pork, large dice (12 protein)
  • 2 teaspoons cornstarch (1/2 carb)
  • 2 cups cauliflower pieces (1/2 carb)
  • 1 1/2 cups onion, sliced (1 carb)
  • 1 1/2 cup scallions, chopped (1 carb)
  • 4 cups cabbage, shredded (1 carb)
  • 4 teaspoons olive oil (12 fat)
  • 1 1/2 cup chicken stock
  • 3 tablespoons soy sauce
  • 1/4 teaspoon black pepper
  • 6 tablespoons jalapeno peppers, diced (if you don't like spicy, use less)
  • 3 tablespoons cider vinegar
  • 2 tablespoons minced garlic
  • 2 tablespoons fresh gingerroot, minced

Preparation

Step 1

In a medium glass bowl, combine the oil, pork, stock, cornstarch, soy sauce, vinegar, scallions, and spices. Cover and refrigerate for 30 minutes.

When the pork is done marinating, place mixture in a medium nonstick saute pan. Saute pork until browned on all sides, then add vegetables and continue cooking until vegetables are tender.

Place pork and vegetables on dinner plates. Serve with a 1 block serving of fruit.
