Ingredients

  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • Salt and pepper to taste
  • 3 cups low sodium chicken broth
  • 1 1/2 cups brown rice
  • 1 cup chopped onion
  • 2 cloves garlic, pressed
  • 1/4 cup chopped green bell pepper

Preparation

Step 1

In a large saucepan, combine:
chicken broth, rice, onion, garlic and
bell pepper. Bring broth mixture to a boil. Add remaining spices and stir. Cover; reduce heat to simmer and cook until rice is fluffy and tender (approximately 45 minutes). Remove pan from heat and allow the contents to cool.
