Lemon-Garlic Chicken

Ingredients

  • 2 tbs olive oil
  • 1 1/2 pounds chicken
  • 1/2 tsp each salt/pepper
  • 2 tbs flour
  • 1 head garlic
  • 2 lemons; zest of one, juice of both
  • 1 1/2 cups chicken stock
  • 2 tbs fresh rosemary, chopped

Step 1

In a large non-stick oven proof skillet/dutch oven, heat oil over medium-high heat. Sprinkle chicken with salt, pepper and flour. Add to skillet. Cook turning until slightly golden on all sides, about 5 minutes. Add garlic, lemon zest/juice, stock and rosemary. Turn to coat. Transfer to oven. Roast until chicken is golden brown and cooked through (170 degrees) about 25 minutes. Let chicken rest.
