Baked Apples and Sweet Potatoes

Ingredients

  • 2 sweet potatoes, sliced into rounds
  • 2 apples, peeled, cored and sliced
  • 3 -oz.canned frozen apple juice
  • concentrate, thawed
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter, cut into small pieces

Preparation

Step 1

Preheat oven to 375 degrees.
Combine the brown sugar and cinnamon in a small bowl and set aside.
Place apples, potatoes and juice concentrate into an 8 inch x 8 inch or small pregreased baking dish ensuring the potatoes and apples are
evenly spread throughout the pan in layers.
Sprinkle the brown sugar and cinnamon mixture over the top of the sweet potatoes and apples.
Across the entire dish, evenly sprinkle the small pieces of butter.
Bake for about 45 minutes or until potatoes and apples are
tender; serve.
