Ingredients
- 2 c. water
- 8 ounces lentils
- 1/4 c. chopped onion
- 1/4 c. chopped green onion
- 1 clove fresh garlic, finely minced
- 1 TB. chili powder
- 1 1/2 tsp. paprika
- 1 TB. cumin
- 1 c. canned kidney beans with liquid
- 1 28-ounce can diced low-sodium tomatoes

Step 1
Rinse and sort lentils. Combine water, lentils, onion, green pepper, garlic and spices. Simmer for 45 minutes to l hour, or until lentils are tender. Add kidney beans and tomatoes, and simmer for 20-30 minutes. Adjust seasoning to taste.
