Ingredients

  • 2

    c. water

  • 8

    ounces lentils

  • 1/4

    c. chopped onion

  • 1/4

    c. chopped green onion

  • 1

    clove fresh garlic, finely minced

  • 1

    TB. chili powder

  • 1 1/2

    tsp. paprika

  • 1

    TB. cumin

  • 1

    c. canned kidney beans with liquid

  • 1

    28-ounce can diced low-sodium tomatoes

Directions

Rinse and sort lentils. Combine water, lentils, onion, green pepper, garlic and spices. Simmer for 45 minutes to l hour, or until lentils are tender. Add kidney beans and tomatoes, and simmer for 20-30 minutes. Adjust seasoning to taste.
