Ingredients
- 1 LB large-size asparagus, cleaned,
- trimmed & cut into 1" pieces
- 2 TBL butter
- 1 tsp salt
- 3 TBL olive oil
- 8 eggs
- 1/2 tsp pepper
- 1/2 C grated parmesan cheese
Preparation
Step 1
cook asparagus pieces slowly in oil &
butter just until tender in 10"
skillet w/ straight sides
beat eggs in bowl w/ S & P
pour gently over asparagus
cook until just set
sprinkle cheese on top of frittata
place in 350 oven long enough for cheese
to melt
allow frittata to stand for 2 min
cut into wedges to serve
