Chinese Noodle Cole Slaw
- 1 large head cabbage, chopped fine or shredded.
- 5 green onions, diced (use the onion and greens)
- 2 packages Ramen noodles, crushed into small pieces (discard flavor package)
- 1/2 cup sesame seeds
- 1/2 cup butter
- 1/2 cup slivered almonds
- 1 cup salad oil (vegetable, canola etc...)
- 2 teaspoons soy sauce
- 1 cup sugar
- 1/2 cup white vinegar
Brown noodles, sesame seeds and almonds in butter until light brown (low flame about 5 minutes) set aside.
Blend oil, soy, sugar & vinegar until well blended. (Dressing can be kept separate in a jar in the fridge if not being served for a while). Shake well before adding to cabbage, onions & noodle mixture.
Mix cabbage, onions, dressing and noodle mixture together.
Refrigerate for at least 20 minutes before serving.
