Ingredients
- Red Adobo:
- 8 garlic cloves
- 1/2 cup ancho chili powder
- 1 1/4 cup boiling water
- 1/2 tsp cinnamon
- 1/4 tsp pepper
- 1/8 tsp ground cumin
- 1 tsp oregano
- 3 Tbsp cider vinegar
- 1 tsp salt
- Green Adobo:
- 6 large unpeeled garlic cloves
- 4 Serrano chiles
- 1 bunch cilantro
- 1 bunch parsley
- 1 cup olive oil
- 1 tsp salt

Step 1
Red Adobo:
Place garlic cloves in a microwave safe dish and cover with water; microwave on high for 1 minute. Blend chili powder with boiling water. Mince softened garlic. Add garlic, cinnamon, pepper, cumin, oregano, cider vinegar and salt to chili powder mixture. Use as a marinade, mix with roasted potatoes, mix with ground pork to make chorizo.
Green Adobo:
Roast garlic and serranos in a skillet over medium heat until soft. Peel garlic and process with chiles, cilantro, parsley, olive oil and salt.
