Ingredients

  • Chicken

  • 8

    whole chicken breasts, boned and split

  • 1

    cup flour

  • 1/4

    cup shortening

  • 1/2

    teaspoon salt

  • dash pepper

  • 1/4

    teaspoon paprika

  • Sauce

  • 4

    tablespoons butter

  • 4

    scallions, chopped

  • 1

    pound fresh mushrooms, sliced

  • 2

    10 1/2 ounce cans cream of mushroom soup

  • 1

    cup sour cream

  • 1/2

    cup sherry

  • 1/2

    cup slivered almonds

Directions

Preheat the oven to 350 degrees. Coat bones breasts with flour and brown in the shortening. Season with salt, pepper, and paprika and place in a shallow baking bowl. Bake for 45 minutes. Sauté scallions and mushrooms in butter. Add soup and sour cream. Add sherry to the sauce; stir and heat. Pour over baked chicken breasts. Sprinkle almonds on top and bake a few minutes until the almonds are crisp.
