Ingredients
- 1/2 (a 15 oz) pkg refrigerated pie crust
- 1 small red pepper, chopped
- 1/2 small onion, chopped
- 2 garlic cloves, minced
- 2 tbs olive oil
- 2 tbs fresh basil, chopped (2 tsp dry)
- 4 large eggs
- 1 cup half and half
- 1 tsp salt
- 1/2 tsp pepper
- 8 oz Monterey Jack cheese, shredded
- 1/3 cup Parmesan cheese
- 3 plum tomatoes, cut into 1/4 inch slices

Step 1
Place pie crust in a 9 inch tart pan. Prick bottom and sides with a fork. Bake at 425 for 10 minutes. Set aside.
Saute pepper, onion and garlic in oil for 5 minutes or until tender; add basil.
In a large bowl, mix eggs half and half, salt and pepper. Add vegetables and cheeses. Pour into crust. Top with tomato. Bake at 375 for 40-45 minutes. Shield crust with aluminum foil after 30 minutes. Let stand 5 minutes before serving.
