Ingredients

  • 1/2

    (a 15 oz) pkg refrigerated pie crust

  • 1

    small red pepper, chopped

  • 1/2

    small onion, chopped

  • 2

    garlic cloves, minced

  • 2

    tbs olive oil

  • 2

    tbs fresh basil, chopped (2 tsp dry)

  • 4

    large eggs

  • 1

    cup half and half

  • 1

    tsp salt

  • 1/2

    tsp pepper

  • 8

    oz Monterey Jack cheese, shredded

  • 1/3

    cup Parmesan cheese

  • 3

    plum tomatoes, cut into 1/4 inch slices

Directions

Place pie crust in a 9 inch tart pan. Prick bottom and sides with a fork. Bake at 425 for 10 minutes. Set aside. Saute pepper, onion and garlic in oil for 5 minutes or until tender; add basil. In a large bowl, mix eggs half and half, salt and pepper. Add vegetables and cheeses. Pour into crust. Top with tomato. Bake at 375 for 40-45 minutes. Shield crust with aluminum foil after 30 minutes. Let stand 5 minutes before serving.
