Ingredients
- Peppered Jumbo Shrimp
- 1 tsp. unsalted butter
- 5 Jumbo shrimp, peeled, leave tail on
- Crushed black pepper - just to cover shrimp
- 1/4 oz. chopped fine shallots
- Black pepper to taste
- 1/4 oz. white wine
- 1 oz. chicken stock
- Juice and zest of 1 orange
- 1/2 orange diced (peeled)
- 1/4 oz Grand Marnier

Step 1
Roll the shrimp in crushed black pepper so they are half covered in pepper.
Melt the butter in a saute pan, shortly saute the peppered shrimp. Take out to a plate and keep warm Using the sane pan, saute the shallots in the remaining butter and season with black pepper to taste. Deglaze the pan with the wine and cook until reduced to one third. Add chicken stock, orange juice zest and diced orange, then cook for a little longer. Remove the pan from the heat and stir in the Grand Marnier. Toss the shrimp in sauce, serve while hot.
