Summer Veggie Salad

Ingredients

  • dressing:
  • 3 c. cauliflowerets
  • 3 c. broccoli florets
  • 1 green pepper, julienned
  • 1 sweet red pepper, julienned
  • 1 c. sliced red onion
  • 1/4 c. oil
  • 4 1/2 t. cider or red wine vinegar
  • 4 1/2 t. lemon juice
  • 1 t. salt
  • 1/2 t. basil
  • 1/2 t. sugar
  • 1/8 t. cayenne pepper

Preparation

Step 1

In large bowl, combine vegetables. Combine dressing ingredients in a jar with a tight fitting lid; shake well. Pour over vegetables and toss to coat. Refrigerate until serving.
