Spicy Tomato Sauce

Homemade is the best. When tomatoes are in season you can't beat the taste. I like to use it to top some spaghetti squash for a delicious low carb, ultra veggie meal!

  • 5 ripe tomatoes
  • 1/2 small white onion (to taste)
  • 1 clove garlic (to taste)
  • 1/2 jalepeno (to taste)
  • 2 tablespoons olive oil
  • sauteed mushrooms to top

Step 1

Boil water in a large pot. 1 tomato at a time drop in the boiling water, wait 60 seconds or until skin is cracking. Put directly into cold water. Repeat with all tomatoes. Cut tomatoes in 1/4s, squeeze out seeds and water. Heat olive oil in pan, add tomatoes, bring to a boil, then turn to a simmer, add chopped onion, garlic and jalepeno. Simmer for 30 minutes, tomatoes will cook down into a thick sauce.
