- Marsala Sauce:
- 1 TBL. Olive Oil
- 4 to 6 pcs. thin sliced chicken breast
- 1 box bow tie pasta (cooked as directed on box)
- 2 TBLS Olive Oil
- 2 cups fresh sliced mushrooms
- 3 cups marsala wine
- 2 cups beef stock
- 1 TBL butter
- 1/2 tsp black pepper
Pound chicken to 1/4 inch, sprinkle w/salt and pepper.
Heat 1 TBL oil, saute chicken (about 5 mins per side) Brown just a little.
Remove chicken from pan, keep warm.
Add 2 TBLS oil to skillet, saute mushrooms.
Add wine, butter, pepper and beef stock.
Bring to boil, reduce heat and simmer 20 minutes. Sauce will thicken and turn dark brown. (can thicken with cornstarch and water)
Place chicken over bow tie noodles and cover w/sauce. Yummy!
